  i must have 40-50 different amaranths.... yes Ive eaten it, i rather like it. though its not as versatile as other cereals as far as I can tell.... I actually just got done picking some leaves for some cooked greens tonight, going to try some water celery from my fish tanks as well....

 there are many short season amaranths, usually varieties selected for leaves though. no matter Im breeding them. theres much confusion on which varieties are which species and further which species will cross, honestly i dont care... i will let that work itself out on its own.

Atash, if you call it a grain you are going to have a lot of confusion and misunderstandings.  A lot of people are grain-free these days and it is commonly understood that they are not eating grass seeds.

Yeah, it kinda gels.  I think it would be good for thickening a fruit-based pie filling or making custards more firm.
